1. START WITH GOOD EGGS.
I’ve shared this in a recent bulletin, but the method I definitely swallow is steaming your eggs. Hard boiled eggs work best when your eggs are “old,, but it is difficult to tell exactly how old your eggs are these days. And sometimes this means that you’re too late (that is, trying to peel them), that your eggs are fresher than you think, and that whites are now stuck to the shells and can’t fit into the eggs of the devil you have. .

The steaming is protected against malfunction. It works at all different egg brands, at different levels of freshness, and I haven’t yet mixed an egg white.

Materials

  • 6 hard boiled or boiled eggs
    2 tablespoons of mayonnaise (or vegan)
    2 teaspoons yellow mustard
    1 teaspoon of dill pickle juice, lemon juice or vinegar
    pepper and salt for tasting

INSTRUCTIONS

  1. Divide each egg lengthwise and remove the yolks. Place all the yellows in a medium-sized bowl. Add mayonnaise, mustard, vinegar and a pinch of salt and pepper to the yolk. Crush with a fork (or beat with a hand mixer) until completely smooth.
    Scoop the spicy egg yolk mixture back into half of the egg white using a spoon. Alternatively, you can place the mixture in a plastic sandwich bag and slide it around the corner to form a “pipe bag”.

NOTES

1. Classic Spicy Egg: Follow the instructions above.

2. Filling Pickle: Use pickle juice as indicated and add 1-2 tablespoons of finely chopped dill pickle and a pinch of dried or fresh dill to your yolk mixture.

3. Peppered Bacon: Add 1 tablespoon of fresh herbs (coriander, dill, basil or parsley) to your yolk mixture and add 1/4 teaspoon of spice to the steak. Garnish with crispy, crumbled bacon, additional fresh herbs and halved baby tomatoes.

4. Smoked Smoked: Use lemon juice instead of pickle juice. Add 1-2 tablespoons of fresh coriander (optional) and 1/4 teaspoon of smoked pepper to the yolk mixture. With additional smoked paprika as desired.

5. Lemon Chive: Use lemon juice instead of pickle juice. Add 1-2 tablespoons of freshly chopped chives and a pinch of black pepper to the yolk mixture. Garnish with a small lemon zest and a pinch of fresh chives.

6. Curry: Use lemon or lemon juice instead of pickle juice. Add 1/4 – 1/2 teaspoon of yellow curry powder to your yolk mixture. If desired, fill with chopped coriander or additional curry powder.

7. Sriracha Lime: Use lemon juice instead of pickle juice. Add a few drops sriracha to the yolk mixture. Add a small amount of lemon zest and additional sriracha as much as you want.

8. Chipotle: Use lemon juice instead of pickle juice. Add 1-2 teaspoons of adobo sauce from a pinch of chili pepper (if you don’t want hot, start with small). Alternatively, you can use 1/4 1/2 teaspoons of dried chipotle pepper powder. If desired, add cilantro and additional chips / sauce.

9. Avocado: Use lemon or lemon juice instead of pickle juice. Use 2-4 tablespoons of fresh avocado instead of mayo. Add fresh coriander as you like. (You can also use the prepared guacamole instead of the avocado!)

10. Salt and Vinegar: Use vinegar instead of pickle juice and add 1 teaspoon to the mixture. Above is coarse sea salt (such as Maldon salt).

11. Salsa Verde: Skip the pickle juice. Add 1-2 tablespoons of salsa verde to the yolk mixture. If you like, add fresh coriander. If desired, top with coriander and more salsa.

12. Buffalo: Add 1-3 teaspoons of Frank’s Red Hot (or another favorite hot sauce) to the yolk mixture. If desired, fill with fresh chives or dill.
